We strive to make the freshest, tastiest handmade chocolate truffles, confections and caramels. We use only the best ingredients possible – Guittard chocolate, fresh cream that does not contain rBST, European butter, and local organic ingredients when possible. This produces luxurious chocolates that are smooth on the tongue and melt in your mouth. All of our confections are individually made – hand painted, hand-rolled and/or hand-dipped, therefore each one is unique in size and shape.
Inspired by my Travels Throughout Europe
The beginning of my love affair with truffles.
The path to the exquisite world of chocolate has been long, varied, and non-traditional. I have always been a chocoholic, seeking out the finest chocolatiers in my travels throughout Europe. While studying in Paris, one of my most vivid memories is of the chocolate shops decorated in pastel colors for Easter, and the incredibly gorgeous Easter Eggs filled with the most delectable truffles. Thus began my love affair with truffles and my determination to learn to make them myself.
While I have never been formally trained, I have “studied” this form of art for many years. About twelve years ago, I began making truffles and candies for friends at Christmas and holidays. Through the years, I would experiment with different chocolates, finally discovering Guittard a few years ago. I have yet to find another chocolate that can compete with the complexities of Guittard. After several years, I found that I was getting more and more requests for my candies and chocolate confections, so I thought about upgrading to better ingredients and exploring different flavor profiles.
After spending two years as a stay at home mom, I felt that it was time to pursue my passion of creating Artisan Chocolates and Confections. The response has been overwhelming! I am constantly inspired by new ingredients and love to create new yummy morsels. I hope that you enjoy eating my creations as much as I enjoyed making them.
All of our Confections have stories behind them — the story is the genesis and inspiration for each unique piece. For example, the award winning Italian Balsamic Fig was inspired by my husband’s business trip to Napoli, Italy where a work collegue invited him over to their home for a tasting of fresh Italian cheese, Balsamic and Fig Jam. He was so inspired by the amazing plate of food that he took the train to Sorrento Italy to find the best Balsamic and best Fig jam to bring home to me. The result? A lovely layered confection that many people now enjoy!
Or how about the inspiration for my award winning Bubbly confection? When I turned 21, my Mom bought me my first bottle of champagne – J vineyards Sparkling Wine. Over the years of my life, this Bubbly has played a large role in almost all of the important events. Many bottles were consumed while I attended and then graduated from Law School with my JD. My boy-friend used it to woo me on my thirtieth birthday — and it worked — I married him! We featured it at our wedding, of course! So it was perfectly natural that I use the J Cuvee 20 Sparking Wine for my Bubbly confection!
We love to travel, and many of our confections trace their origins to our travel. One of my first confections is Tahitian Night – inspired by visiting a vanilla bean farm in Tahiti on our honeymoon, and bringing back fresh Tahitian Vanilla which I placed in Bundaberg rum — Appropriate since I am originally from Australia. Fast foward to November 2012, and we were driving home from the Chicago Fine Chocolate Show held at Navy Pier. We decide to take the long way home and stop in Madison, WI overnight. The next morning we eat breakfast at an amazing restaraunt called The Old Fashioned – YUMM! We had some amazing Cherry Jam made locally, and purchased a bunch to make into our newest flavor: Smoky Mountain Cherry – a lovely applewood smoked cream, made from cows that are a mile from our house, and a layer of dark chocolate brandied cherry ganache with a dollop of the jam. So you can see I love each and every experience in life and use those to craft the finest and most beautiful confections made with an extra measure of Love for you and yours to enjoy.
